77. Circular Economy
The word “economy” comes from Greek words meaning household management. Like this:
These are daikon radish tops drying in the winter sun outside a hunter’s home in Yamanashi. They will probably be made into pickles soon, once they have lost some moisture, and served with a hot pot of wild boar.
The peelings from the root itself can be made into kinpira, a highly - seasoned dry fry that is good with rice.
The starchy water left from washing that rice can be used to simmer furofuki daikon - daikon disks with miso sauce: cooking in starchy water takes away the bitterness.
