The forecast was for snow in the morning and we felt the temperature begin to drop before dinner time..
So, nabe.
It doesn’t start with noodles in the pot like this, but it absolutely must always end with them. It starts with a basket of leafy vegetables and some leeks, mushrooms and chicken simmered in konbu dashi. You ladle those things into a bowl and eat them with just a little broth. Then you return the pot to the stove, add some more vegetables and the udon noodles and eat that.
That’s how you get ready for a snow day.
